Yes, I agree with you on all your points.

We also (still) have people asking for Greyhound, and I want to just print off a sign and hang it in our DVD section sometimes....

I wish I knew/understood the streamers' rationale for not releasing on DVD....

I also had the same reaction when the films "Prey" and "Pam & Tommy",

My personal estimate is that <10% at most of films on Netflix and other
services might see a physical release.  However, when it comes to
anything to do with Apple and their films, I've learned not to hold my
breath in general for any.  We still have patrons asking about the Tom
Hanks movie "Greyhound" from 2020 and it's the same type of issue:
